Mouthwatering Monday: Ravioli Bake

I am all about recipes that are easy, but good.  That’s why I am such a fan of this ravioli bake.  It’s simple and delicious.  I wish I could take credit for it, but I found it over at Feels Like Home.

You need:

  • Non-stick cooking spray
  • 1 pound frozen ravioli (whatever kind you want, cheese, meat, etc)
  • 1 jar of spaghetti sauce
  • 16 ounces of ricotta cheese
  • 2 cups shredded mozzarella cheese

Directions:

  • Preheat oven at 350 degrees.
  • Spray a 9X13 pan with the non-stick cooking spray.
  • Layer the frozen ravioli into the bottom of the pan.
  • Spread the ricotta cheese over the top.
  • Cover with spaghetti sauce.
  • Spread the mozzarella cheese on top.
  • Bake for 45 minutes.

We had this tonight with salad and garlic bread.  Yummy!!

Tempt My Tummy Tuesday: Colorful Ranch Chicken

This recipe is a hit with the kids.

You need:

2 cups colorful Gold Fish crackers, crushed

2/3 cup bottled ranch salad dressing

1lb chicken breasts cut into smaller sizes (to cook faster)

Directions:

Preheat the oven to 425 degrees.  Line a 9×13 pan with aluminum foil and spray with cooking spray.  Place the ranch dressing and the crushed crackers on separate paper plates (for easy clean up).  Dip the chicken into the dressing and then the cracker crumbs.  Make sure both sides are coated.  Put the chicken in the pan and bake for 20 minutes or until chicken is done.
